Dill Seeds: The Aromatic Herb of Scandinavia
Dill is a highly versatile and fast-growing annual herb, indispensable in both the kitchen and the ornamental garden. Known for its delicate, feathery, blue-green foliage and its striking, tall stems topped with distinctive umbrella-like yellow flower heads (umbels). Both the fresh leaves (dill weed) and the dried seeds are essential for flavouring—especially in Scandinavian, Russian, and Eastern European cuisine (think cured fish and pickles). Dill's airy texture makes it a lovely filler plant in cottage gardens, and it is a superb attractor of beneficial insects like hoverflies and parasitic wasps.

Gardener's Tip: Succession Planting for All-Season Leaves
Dill has a tendency to bolt (flower and set seed) quickly in warm weather, which stops leaf production. The secret to ensuring you have fresh dill weed all summer long is succession planting. Plant a small batch of seeds every three to four weeks from April until July directly into the ground where you want them to grow (Dill dislikes transplanting). This ensures a continuous supply of fresh, tender leaves, while a final, later planting can be left to flower and produce seeds for autumn harvesting.
