Preventing Green Shoulders! When the carrot root begins to swell, the top (crown) can sometimes push up out of the soil. Exposure to light causes the crown to turn green and become bitter. To maintain sweetness and colour, always mound up loose soil or compost around the visible crowns of your growing carrots (known as 'earthing up').
