Gardener's Tip for Curing & Storage
Maximise Sweetness Through Curing! Harvest fruits with a few inches of stem attached before the first hard frost. To cure them for optimal flavour and storage, place the squashes in a warm, sunny location (like a greenhouse or sunny windowsill) for 7 to 10 days. This hardens the skin and converts starches to sugar. After curing, store them in a cool , dry environment where they will keep well into the winter.
