The "Early Storage" Secret: While most first-early potatoes must be eaten immediately after harvest because their skins are so delicate, 'Athéna' has the unique ability to develop a slightly thicker skin if left in the ground for about 10 days after the foliage (haulms) has been cut back or died down. This "setting" of the skin allows 'Athéna' to store much better than other early varieties.
