Harvest the stems when the flower bud is just starting to "peek" out of its green sheath and show its colour, but before it has actually unfurled. This is known as the "pencil stage." Once placed in water indoors, the bloom will slowly and dramatically open over 24 hours, giving you up to two weeks of pristine, unblemished beauty inside your home.
